Apple Pie Parfait

The folks at Steve’s Paleo Goods sent me some super yummy samples to try last week. After trying the apple pie granola and maple mustard dressing, I instantly became a fan. This stuff is actually reall good!! These are the foods you dream of eating when on a road trip or airplane flight. Going forward I am definitely stocking some of their goodies in my pantry so I am always prepared for a last minute trip, or even a simple quick snack at home. Their is nothing worse then traveling all day and arriving somewhere exhausted and starving with zero options for foods that won’t make you feel sick, you know? Steve’s also has a great selection of paleo snacks like their jerky & dried fruit kits, a paleo krunch bacon bar, seriously awesome salad dressings and sauces, and more goodies.

Steve’s Paleo apple pie granola tastes great on its own, and also goes great as a topping over my instant berry ice cream or with fresh apples and yogurt in this parfait. And the maple mustard dressing, hell’s belles, that stuff goes great on everything! I used it as a dip for my coconut crusted chicken strips last week, and it took me back to that all American honey mustard dressing I used to love as a kid. Up until now I have had to avoid all pre-made salad dressings as they are usually made with inflammatory soybean oil and other nasties. But not Steve’s! Steve’s is made with real ingredients, hallelujah, ingredients that my body and taste buds love.

Steve’s Apple Pie Granola Ingredients: Raw Almonds, Shredded coconut, Raw Walnuts, Dried Apples, Raw Sunflower Seeds, Raw Almond Slivers, Coconut Oil, Honey, Vanilla Extract, Cinnamon, Ginger, Nutmeg, Cloves.

If you don’t have the yummy apple pie granola on hand, you can easily use some chopped walnuts and pecans in this parfait. Or use my nut pulp granola and flavor it with apple pie spices.

I recently added sheep’s yogurt to my diet after being dairy free most of my life. For now I am only purchasing the sheep yogurt from Bellwether Farms as it doesn’t contain any starchy additives like the goat yogurts I have seen on the market. My neighbors at Mama Tee’s Farmstead have started selling goat milk, so I do intend to try making my own yogurt soon too. Back when I was on the SCD diet I had a breif stink of making homemade yogurts, but cow milk never agreed with my body, though I recently found that goat and sheep milks do. And if you want to keep this dish dairy free you can whip up some vegan coconut cream to use instead.

Apple Pie Parfait

Servings: 1 to 2

Ingredients:

6 oz sheep’s yogurt (or use my vegan whipped coconut cream)
1.5 ounces Steve’s Paleo apple pie granola (or use my granola recipe)
1 apple
1/2 teaspoon cinnamon

Directions:

Chop apple and sprinkle with cinnamon.

Spoon a little yogurt into one or two glass cups.

Add in a layer of chopped apple.

Add a layer of granola, and repeat.
